I highly recommend a recipe I tried during the Thanksgiving holidays. It is Libby's PUMPKIN ROLL.
I tried this recipe which was a special request by my daughter Lauren.

Modifications: YES
I did not add WALNUTS to the batter and I MODIFIED the filling.
I made half the cream cheese filling and combined that with an equal portion of "COOL WHIP". It was light and delicious and my guests from Australia (Hi Renee and Jorge) loved it as well.
